Recipe : 'No Masala' Dry Bhindi

This is a quick recipe of Bhindi ( Okra) without too many ingredients and too many steps.

I like to make this when I am not in the mood to eat anything heavily spicy or with a rich gravy. This hardly takes any time to make too.


Here are the ingredients-

About 300 gms Bhindi

Green chilies 5-6

Handful of curry leaves

Garlic Pods - 10-15 ( this is the star ingredient of this dish) more the better!

Handful of coriander roughly chopped ( this too, more the better !)

1 Tbs Jeera, 1tsp Mustard seeds, a pinch of hing and salt as per taste.

In a kadhai, heat 1 tbs oil.

Once heated add 1tbs Jeera, 1tsp Mustard seeds and one pinch hing and let it splutter.

Now add finely chopped garlic, curry leaves and green chili.

Saute it for next 3-4 mins till garlic turns golden brown.

Now add Bhindi and mix it all well. Add salt as per taste.

Cook it on medium to high flame for next 5-7 mins without the lid.

Cooking Bhindi without the lid helps getting rid of the stickiness.

Now add the chopped coriander.

Cook this on a low flame for another 5-7 mins till the Bhindi is cooked properly.

Serve with soft chapatis.
