Maharashtrian Pithla Recipe

This is one of the most Humble dishes with minimum efforts and maximum flavour. When you are bored or tired and wish for a hassle free meal, this should be your go to food.


Here is the recipe.

  • Take about 1 cup Besan (chickpea flour) Dry whisk it first and then gradually add water to make a paste of it. Consistency should look something like this. Rest it for 10 mins or so.

  • In the meanwhile, take about 4-5 green chillies and grind these with about 8-10 cloves of garlic.

  • Finely chop one big onion.

Now in a deep pan, heat about 1 tbs oil and add 1 tsp mustard seeds. Let it splutter. Add a few curry leaves. Then saute the green chili + garlic we had blended.

Let this cook properly so that the rawness goes away.

Now add the finely chopped onion. Let it cook till it becomes pink.

Finally add the besan slurry and keep stirring.

It will thicken and start bubbling up.

Make sure there are no lumps.

Turn off the heat and garnish with fresh coriander.

Serve it with Bhakri, Garlic Chutney and Fresh raw onion.
