Healthy Tomato and Carrot Soup Recipe

The humble tomato soup with some added healthy ingredient – carrot. Find this Indianized recipe of Tomato and Carrot Soup.

  • Here are the ingredients.

  • In a deep pan, heat about 1 tsp oil. Add half an onion- finely chopped, 4-5 cloves of garlic finely chopped, a bay leaf. Let this cook till the onion becomes golden brown.

  • Now add 4-5 tomatoes and 1 carrot roughly chopped.

  • Let this cook on a medium flame for about 3-4 mins.

  • Now add half a cup of water and a pinch of salt and let it cook for another 5-6 mins.

  • Once completely mushy, take it off the stove. Let it cool down.

  • In a blender, add above without the bay leaf. And blend it into a smooth paste.

  • Most poeple like to strain this, however I like my soup fibrous.

  • Now in the same pan, heat 2 tsp oil, add 4-5 gloves of finely chopped garlic and half an onion finely chopped. Saute it till it cooks nicely.

  • Now add the blended tomato mixture, 1tsp pepper, salt as per taste and herbs if you have handy.

  • I added parsley.

  • Add one cup water and bring it to boil.

  • Garnish it with coriander.
