Healthy Tomato and Carrot Soup Recipe

The humble tomato soup with some added healthy ingredient – carrot. Find this Indianized recipe of Tomato and Carrot Soup.

Here are the ingredients.
In a deep pan, heat about 1 tsp oil. Add half an onion- finely chopped, 4-5 cloves of garlic finely chopped, a bay leaf. Let this cook till the onion becomes golden brown.
Now add 4-5 tomatoes and 1 carrot roughly chopped.
Let this cook on a medium flame for about 3-4 mins.
Now add half a cup of water and a pinch of salt and let it cook for another 5-6 mins.
Once completely mushy, take it off the stove. Let it cool down.
In a blender, add above without the bay leaf. And blend it into a smooth paste.
Most poeple like to strain this, however I like my soup fibrous.
Now in the same pan, heat 2 tsp oil, add 4-5 gloves of finely chopped garlic and half an onion finely chopped. Saute it till it cooks nicely.
Now add the blended tomato mixture, 1tsp pepper, salt as per taste and herbs if you have handy.
I added parsley.
Add one cup water and bring it to boil.
Garnish it with coriander.
