This street food is Mumbai ki Jaan. Masala Toast is a must when it comes to roadside sandwich. After trying a few variations, this recipe comes close to the Bombay Masala Toast.

Boil 3 potatoes. Once cooled, peel off and cut into small pieces.
In a pan, heat 1tbs oil. Once heated, splutter some cumin seeds, 1 pinch of Asafoetida and then add one finely chopped onion. Saute it till onion bcomes brown.
Now add 1tsp Kashmiri Red Chili Powder, ½ tsp Garam Masala, 1 tsp Amchoor Powder ( can be replaced with lemon juice) salt as per taste and ½ tsp coriander powder.
Let the spices roast and turn aromatic.
Now into the pan, add the potatoes we had cut. Mash it while mixing it. Continue doing so for next 2-3 mins.
Add a handful of roughly chopped coriander and mix it again.
Your Aloo Masala is ready.
To assemble sandwich-
Take two slices of bread. Apply butter on both.
On one slice apply green chutney ( Mint - Coriander), On the other slice apply red chutney ( chili garlic)
On one slice apply a spoon full of Aloo Masala. Spread it evenly. On top of this masala, place a few slices of cucumber, tomato, capsicum and onion.
Now on top of this place the other slice of bread.
In a grill pan or a regular pan, heat some oil + butter and toast this sandwich on a medium flame
Serve it with the chutney of your choice :)
