One of the most popular Maharashtrian Dishes. And Mumbai's Burger. Vada Pav is one of the most essential fast foods. In this post I am penning down the recipe of Batata Vada
Ingredients
For Stuffing
Potatoes – 4-5 Boiled and chopped into small pieces
Green Chilies -4-5 finely chopped
Curry leaves – 4-5
Garlic – 7-8 Cloves
Turmeric – Half a teaspoon
Asafoetida( Hing )- 1 pinch
Coriander – For garnish
Salt – as per taste
For cover
Chickpea flour (Besan) – Half cup
Rice flour - 1 tbs
Salt – as per taste
Recipe
1. Boil potatoes and once cooled cut in small pieces.
2. In a pan heat 3-4 teaspoon oil. Add mustard, asafoetida and curry leaves. Let it splutter. In this add finely blended mix of green chillies and garlic cloves. (This is like mirchi thecha)Let this cook for about a minute. Then turn off the flame.
3. Now add the potatoes, salt and turmeric. Mix well. Coriander is optional.
4. Don't smash completely while mixing (Ensure you've turned the flame off. This is very important because heat of the flame makes this bhaji sweat and we di not want that!)
5. Let it cool down. Once completed cooled, make small ball shaped patties. Flatten in the centre slightly.
6. In the meanwhile for the batter - In Chickpea flour add salt and one tbs rice flour. Mix it dry without adding water so that the salt mixes properly.
7. Now slowly add water. Keep the batter slightly thick ( Make sure there are no lumps )
8. In a deep frying pan / vessel once the oil is completely hot, dip the aloo bhaji patties in besan and deep fry the Vada.
